There's a show called Bar Rescue on Spike channel where an industry expert tries to help failing bars. One of the repeated violations (along with dead rats under refrigerators and mushroom-sized spores in the walk-in coolers) are grill hoods so greasy they're practically dripping. If this is standard, it's amazing there aren't more fires.
My favorite episode was a sports bar in Las Vegas that transformed into a bacon bar with bacon bloody marys, bacon on a stick, bacon everything. Mmmm bacon.
I read somewhere 80 bars have been on the show- 20 still went tits up and 20 rejected the new name/theme and went back to the former brand identity that was losing money. I do not understand the industry- why would a bar want to perpetually lose money?
