There's a show called Bar Rescue on Spike channel where an industry expert tries to help failing bars. One of the repeated violations (along with dead rats under refrigerators and mushroom-sized spores in the walk-in coolers) are grill hoods so greasy they're practically dripping. If this is standard, it's amazing there aren't more fires.

My favorite episode was a sports bar in Las Vegas that transformed into a bacon bar with bacon bloody marys, bacon on a stick, bacon everything. Mmmm bacon.

I read somewhere 80 bars have been on the show- 20 still went tits up and 20 rejected the new name/theme and went back to the former brand identity that was losing money. I do not understand the industry- why would a bar want to perpetually lose money?

I think I caught that episode -- the staff was stealing from gramps via loose cash-register and tip protocol. They fired the tatted-up ex-girlfriend but the angry grandson and granddaughter got to keep their jobs despite pulling the same stuff. Good show. I didn't leave with a good feeling about the long-term prospects of the place -- the grandkids seemed too entitled.
I used to be with it, but then they changed what 'it' was. Now, what I'm with isn't 'it,' and what's 'it' seems weird and scary.

At the lodge kitchen, we have our vent hood cleaned yearly. We only use it once, maybe twice a week so a yearly cleaning suffices. They use hot pressure washers to clean the whole thing from the roof vents on down.
Every hood is connected to a fire suppression system, that in the event of a fire in the hood, extinguishers discharge throughout the hood system. The cleaning prevents fires, but also prevents the suppression system from going off which is also a big mess if it occurs. The suppression system also has to be serviced once a year.
Insurance issues always concern us. I'm sure if a fire occurred in the system and the suppression system didn't work or the fire occurred because of lack of maintenance, we'd have a hard time getting our insurance to pay for the damage.
It all boils down to lack of dollars when a restaurant fails to keep their hoods cleaned. I think it costs us 'bout 300 bucks each time for a cleaning but I could be mistaken.
It's not as easy as it used to be finding time to let my mind wander.

When I worked at a fast food place as a teenager, we were told not to fuck around with the fire suppression systems above grills. Story was that the chemicals used in it were so toxic, that the grills could never produce consumable food again, no matter much you washed them.

Sounds like a prudent schedule for what kind of grease you are stuffing up there. It's a hard sell for some places (Chinese restaurants esp.) the smart ones see it as a cost of doing business. When things get good and coated up it's bad--and then when the fire starts up there it's hell to put out.
It is definitely a nasty, greezy job, a kind of Mike Rowe thing. They have a hard time getting and keeping good cleaners.

At least one Detroit firefighter has been injured while battling a fire at a commercial building on Ferry Avenue at Russell Street in Detroit.

The firefighter has suffered significant injuries, but is expected to be OK. He fell about 10 feet from the base of the truck ladder as he tried to jump out of the way of a falling brick wall. He was struck by some of the falling bricks.

He has been taken to Detroit Receiving Hospital with neck and back injuries.

The same commercial building -- Palmer Products -- burned last week. The fire started again sometime Tuesday afternoon.

The cause of the fire is not known at this time.

Detroit firefighters are battling a 2nd alarm fire at a gentlemen's clubs on Grand River & Griswold in downtown Detroit.

Local 4 has a crew on the way to the scene.

Ten years ago, a friend's 30th birthday became an odyssey of walking around and hitting bars near Washington Blvd./Grand Circus Park during a summer Saturday afternoon. We eventually ended up at the Grind, where the only talent was a scrawny woman who might've just stepped out of the methadone clinic line.

To compensate (I think), the very large lady behind the bar put matches in the piercings in her nipples and twirled them around after lighting them. So there's that.

The real tragedy is Cafe D'Mongo was spared.
My hand to God, she's gonna be at Carnegie Hall. But you - I'll let you have her now at the old price, OK? Which is, which is anything you wanna give me. Anything at all.
